    Strawberry-Pineapple Jam

    Strawberry-Pineapple Jam.......... ANNIE

    1 package (10 ounces) frozen strawberries in syrup, defrosted
    1 can (1 pound 4 ounces) crushed pineapple in its own syrup
    4 1/2 cups sugar
    Grated peel and juice of one lemon
    Grated peel and juice of three oranges
    2 packages (3 ounces each) liquid pectin

    Place strawberries and pineapple, with their syrup, in a deep heavy saucepan. Stir in the sugar, the peel and the juice from lemon and oranges. Cook over moderate heat, stirring occasionally, until the sugar is completely dissolved.

    Increase the heat to high, bring to a full rolling boil, and boil rapidly for 1 minute. Stir in the pectin and continue boiling rapidly for 4 minutes, stirring
    occasionally. Remove from the heat and stir for about 5 minutes to keep the fruit from falling to the bottom.

    Refrigerate for up to 2 months or freeze for up to 1 year. Can also process in a BWB for 10 minutes.
