    Mango Bread

    2 C. flour
    2 tsp. baking soda
    1/4 tsp. salt
    1-1/2 C. sugar
    2 tsp. cinnamon
    3 eggs, beaten
    3/4 C. vegetable oil
    2 C. mango, finely chopped
    3/4 C. pecans, chopped (I would probably use macadamia nuts.)
    1 T. lime juice

    In a bowl, combine the dry ingredients and mix. Make a well in the center and add the eggs and oil. Stir until moistened. Stir in the rest of the ingredients. Pour into 2 greased loaf pans. Bake @ 375 degrees for 1 hour. She used fresh mango, but I would think that the jarred mango would work as well.
