Corn Puffs with Maple Sauce
MAPLE SAUCE
1 cup pure maple syrup
6 tablespoons butter
½ teaspoon cinnamon
¼ teaspoon allspice
PUFFS
1 ½ cups all-purpose flour
¾ teaspoon salt
2 teaspoons baking powder
2 eggs
½ cup milk
2 cups corn kernels (either frozen or fresh)
½ cup vegetable oil

MAPLE SAUCE
Place all the ingredients in a saucepan and boil them for 2 to 3 minutes. Remove the sauce from the heat and beat it until it is blended.
PUFFS
Sift the flour, salt, and baking powder together. In a large bowl, beat the eggs and add the milk and corn. fold in the flour mixture, being careful not to overmix. let the batter sit for a while. Then drop it by tablespoonfuls into the hot oil and fry the puffs until they are golden brown. The sauce can be poured over the puffs or served on the side as a dip.
Makes about 3 dozen.
