    Strawberry Bread

    (Makes 2 regular-sized loaves)


    List of Ingredients


    • 3 cups plain flour
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 tablespoon cinnamon
    • 2 cups sugar
    • 4 eggs, beaten
    • 1-1/4 cups vegetable oil
    • 2 cups sliced frozen strawberries, thawed
    • 1-1/4 cup pecans, chopped


    Instructions


    1. Preheat oven to 350° F.
    2. Combine dry ingredients.
    3. Add eggs, oil, berries, and pecans.
    4. Stir until all are moistened.
    5. Spoon batter into 2 well greased and floured loaf pans.
    6. Bake at 350° F for 60-70 minutes or until bread tests done.
    7. Cool in pan 5 minutes.
    8. Remove from pans and place on a wire rack to finish cooling.
