    Lemon Cream Pie-Diabetic


    List of Ingredients


    • 1/2 cup ground nuts-Almonds or pecans
    • 4 packets artificial sweetener or 3 tablespoons Splenda, divided
    • 2 tablespoons butter, melted
    • 2 packages sugar free lemon gelatin
    • 2 tablespoons lemon juice
    • 8 ounces cream cheese, softened.


    Instructions


    1. Mix together the ground nuts, melted butter, and half of the sweetener. Press this mixture into a pie plate and bake at 300 degrees for about 8 minutes. Chill the crust while making the filling.
    2. Dissolve the 2 packages of gelatin in 1 cup hot water and the lemon juice.
    3. Put it in the refrigerator to cool while preparing the rest.
    4. Whip the cream cheese with the remaining artificial sweetener and stir in the cooled gelatin mixture. Pour the filling into the chilled crust and chill until set.
    5. Top with additional whipped cream, if desired.
