    Strawberry Baked Meringue Sundae

    This light baked meringue provides a great base for a simple dessert of ice cream and fruit.

    Makes 4-6


    List of Ingredients


    • 8 Egg whites
    • 1 1/2 cup Sugar
    • 1/4 teaspoon salt
    • 1 teaspoon Vanilla
    • 1 pint Strawberries, sliced
    • Vanilla ice cream


    Instructions


    1. Place the egg whites and salt in the mixer's bowl. Whip
      until it begins to thicken.
    2. With the mixer running, slowly add the sugar and vanilla. Beat until firm.
    3. Pre-heat the oven to 250.
    4. Cover a cookie sheet with baker's parchment paper.
    5. Place mounds of approximately two tablespoons of the
      mixture a few inches apart.
    6. Cook for about 1 hour (or until the meringues are firm).
    7. Cool.
    8. Use immediately or store, covered, at room temperature.
    9. Top with ice cream and sliced strawberries.
