    CREAM PUFFS

    Makes 1 to 2 dozen.

    Could easily use sugar free pudding and make this, a ok Diabetic treat.


    List of Ingredients


    • 1 c. water
    • 1/2 c. oil
    • 1 c. flour
    • 4 eggs
    • 2 pkg. vanilla pudding
    • Pinch of salt
    • Confectioners' sugar


    Instructions


    1. Preheat oven to 400 degrees.
    2. Prepare pudding as package directions the
      night before, refrigerate.
    3. Boil 1 cup water. When water boils, add 1/2
      cup oil and 1 cup flour.
    4. Stir until thick paste. Cool a little.
    5. Add 1 egg at a time, mixing into thick paste until all 4 eggs are mixed in.
    6. Add pinch of salt now.
    7. Drop a teaspoon of mixture onto lined cookie sheet.
    8. Bake in 400 degree oven for 30 minutes or until lightly brown. Cool.
    9. Gently cut in half and fill with pudding.
    10. Sprinkle with confectioners' sugar.
    11. Put in cupcake holders.
    12. Refrigerate.
