CREAM PUFFS
Makes 1 to 2 dozen.
Could easily use sugar free pudding and make this, a ok Diabetic treat.
List of Ingredients
- 1 c. water
- 1/2 c. oil
- 1 c. flour
- 4 eggs
- 2 pkg. vanilla pudding
- Pinch of salt
- Confectioners' sugar
Instructions
- Preheat oven to 400 degrees.
- Prepare pudding as package directions the
night before, refrigerate.
- Boil 1 cup water. When water boils, add 1/2
cup oil and 1 cup flour.
- Stir until thick paste. Cool a little.
- Add 1 egg at a time, mixing into thick paste until all 4 eggs are mixed in.
- Add pinch of salt now.
- Drop a teaspoon of mixture onto lined cookie sheet.
- Bake in 400 degree oven for 30 minutes or until lightly brown. Cool.
- Gently cut in half and fill with pudding.
- Sprinkle with confectioners' sugar.
- Put in cupcake holders.
- Refrigerate.
