    Exotic Mushroom Soup

    Recipe Introduction


    Yield: 6-8 servings


    List of Ingredients


    • 1 lb. assorted mushrooms (shitake, portabello, crimini) sliced
    • 1 1/2 shallots, sliced
    • 1 sprig fresh thyme
    • 1/4 cup onion, sliced
    • 1 clove garlic, minced
    • 3 Tbsp. butter
    • 1 1/2 Tbsp. flour
    • 1 qt. chicken broth
    • 3/4 pint heavy whipping cream
    • hot pepper sauce
    • salt and black pepper


    Instructions


    1. In a large soup pot saute mushrooms, shallots, thyme, onion and garlic in butter. Saute until the mushrooms are lightly browned (reserve some of the mushrooms for garnishing the finished soup).

    2. Add the flour and cook for one minute. Add the chicken broth and bring to a boil, simmer for 20-30 minutes.

    3. Puree soup in a blender until smooth.

    4. Return to soup pot and add the heavy cream. Bring to a simmer and adjust the seasoning with a dash of hot sauce, salt and pepper.
