    Wild Rice Soup

    Yield: 6-8 servings


    List of Ingredients


    • 4 1/2 oz. cooked wild rice
    • 3 Tbsp. butter
    • 1/2 cup leeks, diced
    • 1/2 cup carrots, diced
    • 1/2 cup celery, diced
    • 3 Tbsp. flour
    • 1 quart chicken broth
    • 3/4 pint heavy whipping cream
    • salt and black pepper


    Instructions


    1. Prepare wild rice ahead of time and reserve for the soup.
    2. In a large soup pot saute the leeks, carrots and celery until the vegetables are softened, about 2-3 minutes on medium heat.
    3. Add the flour and cook for one minute. Add chicken stock and cooked rice. Bring to a boil and simmer for 20-30 minutes.
    4. Add the whipping cream and season with salt and black pepper.
