List of Ingredients
4 oz / 100g coconut, fresh or desiccated
1 onion
¼ pint / 140 ml coconut milk
½tsp / 1g chili powder (to taste)
1 juice of one lemon
Recipe
Finely chop the coconut and onion (food processor worked here but be careful to pulse not puree).
Mix all the ingredients together and cook very gently until the onion is soft - about 10 - 12 minutes.
Author’s Notes: The coconut makes this a sweet sauce. This sauce can also be served without cooking, but it tastes better if the onion isn't crunchy.
