makes a 7-3/8x3-5/8x2-1/4 inch loaf pan. No refined sugar, or eggs.
List of Ingredients
3 ounces ready to eat crunchy nutlike cereal (be creative here such as Perky's Rice Nuts, Puffed millet or Enjoy life Granola)_
1/4 C raisins, chopped
2 tsp shredded coconut
1/3 C thawed frozen concentrate apple juice
1 tsp honey
1 envelope unflavored gelatin
Recipe
In a small bowl combine cereal, raisins and coconut; set aside.In a small saucepan combine juice and honey; sprinkle with gelatin and let stand to soften. Cook over low heat, stirring constantly, until gelatin is completely dissolved.
Pour juice mixture over cereal mixture and stir until thoroughly combined. Spray a 7-3/8x3-5/8x2-1/4 inch loaf pan with nonstick cooking spray and pack cereal mixture firmly into pan; cover and refrigerate until firm. Using the point of a sharp knife, loosen edges of fruited cereal from pan; invert onto a plate and cut into 4 equal bars. Wrap each bar in plastic wrap and store in refrigerator until ready to use.
