Brazilian Black Beans & Rice

2T Olive Oil
1c Rice (medium grain)
1 Tomato chopped
1 Onion Chopped
1 bag Black Beans (soaked overnight)
Ham hock, Pig's foot, hunk of salamiRecipe
Replace water the beans soaked in over night with enough to cover by a few inches. Throw in a ham hock, pig's foot or salami. Bring to a boil, lower to a simmer and cook until tender.
Heat oil and saute the rice with the toms and onions. Add enough water to cover rice and simmer covered until done.
