Note from Candace: the recipe my friend gave me calls for kidney beans- BLECCH! I use black beans. We always doubled it as DH loved it, and then you can use a whole can of the inexpensive spaghetti sauce. Like pizza, a lot can be altered to fit taste preferences. I often add garlic, onions and mushrooms with my ground beef and peppers. If my kids would eat "combined foods" this would be a great place add extra sauce and hide shredded zuchini or carrots. Often better the second day. It would be good without the cheese, but DH hasn't gotten there yet.
List of Ingredients
1 lb ground beef
16 oz can kidney beans
15 oz pizza or spaghetti sauce
14 1/2 oz can stewed tomatoes, undrained
8 oz can tomato sauce
3 1/2 oz pepperoni
1/2 C green pepper, chopped
1 tsp italian seasoning
Top with Mozzerella, if allowed
Recipe
Brown your ground beef with the chopped peppers. Drain well, then combine with all other ingredients and simmer on low for 30 minutes or until desired thickness.
