List of Ingredients
1 cup red lentils
2 tbsp olive oil
1/2 red bell pepper, chopped
1/2 red onion, chopped
1 tbsp garlic, minced
4 plum tomatoes, peeled, seeded & chopped
1 small orange, peeled & chopped
1 tbsp balsamic vinegar
1 tbsp fresh basil, chopped
Recipe
Prepare lentils according to package directions. Let cool.
In a skillet; heat oil.
Add bell pepper, onion and garlic. Saute until onion is translucent, about 3 minutes. Let cool.
In a large bowl; combine lentils, bell pepper mixture, tomatoes, orange, vinegar and basil.
Refrigerate until well chilled.
Serves 6
