Matasca (Peruvian Beef Stew)

List of Ingredients
* 1 lb (½ k) beef
* ¼ cup oil
* ½ cup white potato, diced
* 1 onion, finely chopped
* 4 garlic cloves, minced
* 1 tablespoon ají panca / sundried red aji (chili) paste (be sure to check gf status)
* 1 cup beef stock (be sure to check gf status)
* ½ cup peas
* 1 cup corn kernels
* 2 tablespoons minced mint
Recipe
Dice meat and brown it in hot oil.
Add onion, ají and garlic. Stir well.
Add beef stock together with corn and peas.
Bring to a boil for 10 minutes.
Add potatoes and continue cooking until tender.
Sprinkle with minced mint.
Serve with white rice.
Yield: 6 servings
