Orange Beef and Potatoes

List of Ingredients
2 green onions, sliced
3 tbsp (40 ml) soy sauce
4 tbsp (50 ml) water
1 tbsp (15 ml) sugar
4 tsp (20 ml) vegetable oil
1 tbsp (15 ml) orange juice
1 tsp (5 ml) grated orange peel
1 tsp (5 ml) white vinegar
3/4 tsp(3 ml) ground ginger
1 tbsp (15 ml) quick cooking tapioca (be sure to check gf status)
1.5 lbs(750 g) beef stew meat, cut into large cubes
1 lb (500 g) small potatoes, quarteredRecipe
In a large bowl; combine green onions, soy sauce, water, sugar, 3 teaspoons (15 ml) oil, orange juice, orange peel, vinegar and ginger. Stir in tapioca and let stand for 15 minutes.
Meanwhile, heat remaining oil in skillet over medium heat. Add beef and quickly sear on all sides until brown.
Place beef, beef drippings and potatoes in greased 11 x 7 inch (28 x 17.5 cm) baking dish. Pour tapioca mixture over top. Cover and bake in preheated 350 F (180 C) oven for 2 hours or until meat is tender.
