    Adapted from a Contest Winning Recipe From Quick Cooking

    List of Ingredients




    * 1-3/8 cup warm water (70° to 80°)
    * 1 egg and 1 egg yolk (3 T flax meal plus 9 T warm water)
    * 1/3 cup honey
    * 1 egg white (4 T Rice Milk instead)
    * 1/2 cup plus 2 tablespoons olive oil

    * 1-1/2 teaspoons salt
    * 1 cup tapioca flour
    * 2-1/2 cups rice flour
    * 4 teaspoons Xanthan Gum

    * 2-1/4 teaspoons active dry yeast (use 1 T baking soda and 1 T lemon juice instead)

    If using yeast, follow your manufacturers instructions for how to add it, then also let it rise after mixing.

    For the yeast-free version, mix all ingredients for batter except baking soda and lemon juice in your stand mixer according to manufacturer's directions.

    Add baking soda and lemon juice last and mix.

    Oil hands with olive oil or other preferred oil just before you divide batter into 24 pieces; shape each into a ball and immediately place 12 balls each in two greased 8" square baking pans.

    Bake at 350°F for 35 minutes or until golden brown.

    Brush with additional honey if desired.

    Yield: 2 dozen.

    (If using eggs and yeast, you should start checking it at about 20 minutes.)
