Banana Skillet Bread

List of Ingredients
1 c teff flour
1 c sorghum flour
1 Tbsp quinoa flour
1 Tbsp + 1 tsp baking powder
1/2 tsp baking soda
3/4 c carob chips
2 tsp xantham gum
pinch of salt
2 large ripe bananas
1 tbsp flax meal
2/3 c maple syrup
1/2 c coconut oil
1 1/2 tsp vanilla
1/3 c sparkling water
Recipe
Pre-heat oven to 350F.
Prepare a 10" cast iron skillet.
Combine all dry ingredients in one bowl.
Blend wet ingredients except for the sparkling water.
Add all to the dry ingredients, mix until well combined, but do not overmix.
Bake for 30 minutes.
Notes: I used carob chips as my dd has multiple severe food allergies. It certainly will work with chocolate chips. Those that tried cannot tell the difference. the original recipe did not call for carob or chocolate. Enjoy
