Blueberry Nut Bread

Recipe Introduction
Blueberry Nut Bread, adapted from a recipe at Recipezaar, to be gluten and casein free. The mix you use will depend on whether it is corn and soy free as well.
List of Ingredients
1 cup blueberries (or huckleberries or cranberries)
1/2 cup sugar
1 teaspoon salt 2 tablespoons
* oil* (or you can use applesauce)
4 teaspoons baking powder
1 cup * nutmeats*
1 teaspoon grated lemon
zest (orange zest or 1/2 teaspoon nutmeg)
2 beaten eggs
1 cup soured
coconut (or other milk sub)
3 cups GF flour blend
Recipe
1. Sift dry ingredients together.
2. Combine beaten eggs, soured milk and oil.
3. Add to dry ingredients.
4. Mix lightly to dampen.
5. Stir in nutmeats and blueberries.
6. Spoon into loaf pan.
7. Let stand about 20 minutes.
