Carrot Bread

Recipe Introduction
carrot bread with many options for substitutions. Contains no gluten, dairy, sugar or eggs.
List of Ingredients
1 1/4 C. amaranth flour
2 t. baking soda
1/4 t. cinnamon
1/4 t. salt
1/4 t. nutmeg
1/4 t. cloves
1/2 C. date jam (actually i substituted 1/2 cup blueberry jam, which
was surprisingly runny)
1/4 C. oil
1 C. nut milk or carrot juice or orange juice (I used almond milk)
3/4 C. grated carrots
3/4 t. vanilla
Recipe
Bake in a parchment-lined loaf pan for about an hour at 350 F.
