    3 over ripe bananas, mashed
    1/4 cup vegetable oil
    1 teaspoon safe vanilla
    1 cup sugar or sugar sub.
    2 cups gf,sf all purpose flour( any safe flour mixture will work)
    1 teaspoon salt
    1 teaspoon baking soda
    1 cup chopped nut(OPTIONAL)
    or add raisins or dates optional

    Mash up Bananas then add oil,vanilla, and sugar,mix well.

    Add all purpose flour(sift if you want),salt,and baking soda all together and then add to banana mixture.

    Add optional ingredients if you want.

    Mix well.

    Put into greased loaf pans.(a couple of small ones are better)

    Bake at 350 for about 60 minutes or till done.

    Stick a toothpick in the middle or a butter knife if it comes out clean then the bread is ready.

    Cool 10 minutes in pan, then remove to rack to cool completely before cutting.

    Carolyn's Notes: I then put in a tupperware container to store it in the refrigerator, I freeze what we dont use right away. I like to eat the bread hot so I usually cut me a piece while it is hot and spread dairy free butter on it. MMMM good.
