    List of Ingredients




    1/2 cup shortening (softened or melted)
    2/3 cup agave or 3/4 cup Maple Syrup or 3/4 cup honey
    3 large or 3-1/2 small very ripe bananas (if using frozen bananas, thaw first and then remove as much liquid as possible from thawed bananas before mixing into batter to accommodate the extra liquid in the Maple Syrup, honey or Agave Nectar) - if using fresh, use 2-1/2 to 3 small bananas
    2 eggs (used 1/2 cup applesauce instead of eggs - for binding - and add 1 flax egg replacer (1T flax meal and 2T warm water))
    1 tsp vanilla
    1 cup Sorghum Flour or Bob's Red Mill All Purpose Mix
    1/2 cup Rice Flour
    1/2 cup Tapioca Flour
    1 teaspoon Xanthan Gum
    3 tsp homemade baking powder (2 tsp of store bought GFCF baking powder)

    Recipe



    In a large bowl, cream shortening with sugar, beat in eggs, vanilla and bananas.

    In another bowl mix together flour, Xanthan gum and baking powder.

    Combine and beat until dry ingredients are moist.

    Let sit for about 10 minutes before putting in the pans.

    Then, turn batter into 2 - 9x5 loaf pans.

    Smooth the tops with Rice Milk as an "egg wash" to keep the crusts from getting too hard.

    Bake at 325 degrees for 1 hour and 20 minutes or until toothpick comes out clean.

    "Caution" Do Not Under Bake.
