    Pumpkin Bread

    Makes two standard sized Loaves

    List of Ingredients

    > Pumpkin Bread
    3 cups GFCF flour mixture
    1.5 tsp salt
    1 tsp ground cinnamon
    1 tsp nutmeg
    2 tsp baking soda
    3 tsp xanthan gum OR flaxseed gel
    2 c pureed cooked or canned pumpkin
    1 c honey
    1 c oil
    1/2 c water
    4 eggs

    Recipe

    Oil and flour 2 loaf pans.

    Stir together flour, sugar, baking soda, salt and spices.

    In a separate bowl, stir together pumpkin, oil and water. Add eggs one at a time.

    Make a well in center of flour mixture, add pumpkin mixture and stir.

    Pour into prepared pans and bake for 1 hour at 325F.
