    List of Ingredients




    3 cup Marci's Mock Better Batter or Jules GF Blend (both recipes filed under Flour Mixes)
    1 tsp salt
    2 tsp baking soda
    2 tsp baking powder
    2 tsp cinnamon
    1-1/2 cup oil
    2 cup sugar
    4 eggs, beaten
    2 cup canned pumpkin

    Recipe



    Sift together flour, salt, baking soda, baking powder and cinnamon 3 times; set aside.

    In a second bowl, beat together eggs and pumpkin.

    Add the oil and sugar and mix well.

    Begin to blend in flour mixture a little at at time; stirring each time until well mixed.

    Pour into 2 greased 9"x5" loaf pans.

    Bake for one hour at 350 degrees.

    Makes 2 loaves.

    Note from BL: My family prefers a little spice to this bread. I added cinnamon, nutmeg, star anise and a pinch of cloves.
