    1/2 cup brown rice flour
    1/2 cup sorghum flour
    1/2 cup tapioca flour
    1/2 cup potato starch
    1/2 cup cornstarch
    1/4 cup teff flour
    1/4 cup millet flour
    1 Tbls ground flax meal
    2 tsp xanthan
    1/2 Tbls salt
    1/4 cup sugar
    2 Tbls dry active yeast (NOT rapid rise)
    2 tsp oil
    1-1/2 cup + 2 Tbls warm water

    HAND MIXING: Place the wet ingredients in the bowl of your heavy duty mixer, turn the mixer to LOW and add the dry ingredients gradually.

    Turn the mixer to MEDIUM-HIGH and beat for 5 minutes or until bread dough is smooth, well mixed and looks like thick cake batter.

    Pour batter into a greased and rice floured 10-in.x 5-in. loaf pan; put in a warm, draft free area and let rise for about 15 minutes or until bread has just about reached the top of the pan.

    Bake in a preheated oven 350° for 45-50 minutes, tenting with foil the last 10 minutes.

    Use a toothpick to test for doneness.

    Cool for 15 minutes in pan and then remove to a wire rack to cool completely before cutting or storing.

    Yield: 1 loaf (about 16 slices)
