Recipe Introduction
Makes 4 to 6 servings.
List of Ingredients
1 c quinoa, amaranth, teff, millet or GF grain of choice
1 Onion, chopped fine
2 c Vegetable stockRecipe
Mix cereal grains and onion with 1 cup boiling stock in pan or
casserole with tight fitting cover. Bake in 300 degree F oven for 45 minutes. Add second cup of hot stock and continue baking 30 to 40 minutes or until grain is soft and mixture is almost dry.
Variation: Add 2 tablespoons minced parsley; 1/2 to 1
teaspoons of your favorite herbs.
NB: I suggest you keep a close eye on it after 20 minutes or so because my stock was gone well before 45 minutes was up.
