Baked Millet Apple Pie

A modified Mark Bittman recipe
List of Ingredients
1 1/2 cup water
1 cup apple juice
2 apples, diced (do not peel)
8 medjool dates, pitted
1/2 cup millet
2 tbsp amaranth (I use steel cut oats)
2 tsp vanilla extract
2 tsp ground cinnamon
1 tsp maple extract
1/4 tsp nutmeg
1/4 tsp ginger
Topping
1/2 cup walnuts, chopped (I use pumpkin seeds)
1/4 cup almond flour (I use flax meal)
2 tbsp coconut oil, melted
2 tbsp coconut sugar
Add-ins: raisins, granola, shelled flax, nut butter, milk!
Recipe
Preheat oven to 350. In a blender, combine apple juice, dates, vanilla, cinnamon, maple extract, nutmeg and ginger. Blend until smooth. Pour mixture into a large casserole dish. Add diced apple, millet, and amaranth to the casserole dish.
Cover and cook for 80-90 min or until grains are fully cooked and most liquid is gone. Meanwhile prepare topping by combining all topping ingredients a couple of minutes before bake is done.
Remove casserole dish from oven and cover with topping. Return back to the oven for 10 min. Remove from oven and cool for 15 min before enjoying. Serves 6.
