Harvest Berry Oven Pancake

Recipe Introduction
Preheat oven to 400ºF.
List of Ingredients
BATTER
1/2 cup GF flour blend
2 tablespoons sugar*
1/2 cup milk sub
1 medium egg
FILLING
1 1/4 cups fresh cranberries or frozen cranberries
2 apples, diced 1/2 cup chopped walnuts (optional) 1/4 cup CF margarine
1/2 cup demerra sugar (plantation sugar or succanat)
1 teaspoon cinnamon 1/2 teaspoon nutmegRecipe
Grease a 9-inch pie plate.
Combine all batter ingredients in a medium mixing bowl. Beat using an electric mixer for one minute. Pour batter into prepared pan.
Bake for 20 minutes or until golden brown.
Cook all filling ingredients in a skillet until cranberries and apples have softened.
Remove pancake from oven.
If center has puffed, place a clean potholder or dishtowel on top and gently push down.
Spoon filling into center of pancake.
Serve immediately.
*sub with 1/4 tsp of powder stevia or 10 drops liquid
