Jicama Hash Browns

4 cups of jicama, peeled and grated
1 onion, chopped
2 Tbs. oil
Salt and pepper, to taste
Recipe
In a large skillet, heat the oil over medium high heat. Add the onion and cook until translucent. Add the jicama, salt and pepper and cook until brown.
Note: I put the grated jicama in some cheese cloth and pressed to get rid of some of the moisture and this helped them brown up nicely.
Variations: Reduce grated jicama by a cup and add 1/2 to 3/4 cup grated butternut squash and 1/2 lb of ground sausage.
