15 ml vegetable oil (1 tbsp)
40 ml pumpkin seeds (3 tbsp)
1 onion, finely chopped
1 red chilli, seeded & finely chopped
1 can cannellini beans, drained & chopped (14 oz)
50 ml fresh breadcrumbs (1/4 cup)
1 egg, beaten
15 ml lemon juice (1 tbsp)
30 ml fresh parsley, chopped (2 tbsp)
Recipe
In a large skillet; heat oil.
Add pumpkin seeds, onion and chilli.
Gently cook for 5 minutes.
Remove from heat.
Stir in beans, breadcrumbs, egg, lemon juice and parsley.
Add salt and pepper if desired.
Shape mixture into patties.
In a large skillet; heat a small amount of oil.
Add patties and fry for 3 to 4 minutes each side until golden brown.
Serve on hamburger bun.
