    List of Ingredients




    1 cup turbinado sugar
    1 cup carrots, shredded
    2 cups white rice flour
    3/4 cup tapioca flour
    1/4 cup potato starch (tapioca flour) (I'm out of everything)
    1/2 cup coconut oil
    3 eggs, beaten
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 tablespoon lemon juice [in place of the citric acid...mix this up, then add the lemon juice as the very last ingredient]
    1/2 cup raisins (didn't use)
    2 teaspoons vanilla
    1 teaspoon xanthan gum (guar gum)
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    (pinch of salt)
    (1 tbl of milk sub)

    I will give you a base to work off of...its always scary when the first ingredient is a sugar...telling me this is SUPER sweet....the only liquid here is the oil, pineapple juice, and of course the eggs help....if i were doing this at first, i would use one of those small cans of dole pineapple tidbits, slices, etc, cut up , and the juice..if this seems too dry, I would thin it with a milk sub...here goes...

    lets try for a 13 X 9...bake 375 degrees (30-35 minutes)

    Put it all in a bowl and stir until just moistened...it should be a fairly thick cake batter, yet pourable [not like pancake batter in other words]...add lemon juice at the end, stir just until incorporated....pour into 13 X 9 baking dish...let "proof" on the counter 15 minutes...bake
