    Applesauce Cake

    Recipe Introduction

    Use the Brown Sugar Frosting found elsewhere in the archives (hint hint, under frostings)

    List of Ingredients

    2/3 cup olive oil, softened
    1 1/2 cups brown sugar, packed
    3 eggs
    1 teaspoon vanilla
    3 cups GF flour blend (less than 3/4 c protein flour)
    2 1/4 teaspoons baking powder
    1 teaspoon salt
    3/4 teaspoon baking soda
    3/4 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/4 teaspoon ground allspice
    1/4 teaspoon ground nutmeg
    1 1/2 cups unsweetened applesauce
    1/3 cup nut milk soured with 2 tbsp lemon juice (or vinegar)

    Recipe

    Grease a 9" x 13" cake pan; line the bottom with
    parchment paper. Set aside.

    In a large bowl, beat the oil with the brown sugar until fluffy; beat in the eggs, one at a time. Beat in the vanilla.

    In a separate bowl, whisk together the flour, baking powder,
    salt, baking soda, cinnamon, ginger, allspice and nutmeg.
    Stir into the oil mixture alternately with the applesauce and soured milk, making 3 additions of dry ingredients and 2 of wet.

    Spread in the prepared pan.

    Bake in the centre of a 350 degree F oven until the cake tester inserted in the centre comes out clean, about 35 minutes.

    Let cool in the pan on a rack.

    Drizzile with Brown Sugar Frosting spread over the top of the warm cake just to the edge, letting the icing drizzle over slightly.
