    1-1/4 Cup quinoa flour

    1/2 tsp baking soda

    1/2 tsp salt

    1/2 tsp baking powder

    1 Cup sugar

    2 eggs

    1/4 Cup oil

    1 tsp vanilla

    1/2 Cup water

    1/4 Cup mayonnaise

    1/4 Cup baking cocoa

    Recipe



    In a small saucepan, warm water and dissolve cocoa in it; set aside to cool. In a small bowl, combine the flour, baking soda and powder and salt; set aside. Place the eggs, oil, vanilla and sugar in a mixing bowl; beat until smooth. Gradually alternate cooled cocoa water and dry flour ingredients. Once mixture is combined, beat in
    mayonnaise until batter is smooth and free of lumps. Spoon batter into paper-lined muffin tins until 2/3 full. Bake at 375° for 15 minutes or until cupcakes test done using a toothpick inserted into the centers. Cool completely before frosting if desired. Yield: 12-13 cupcakes
