Chocolate Zucchini Cake

List of Ingredients
1/2 cup cf margarine (I used Earth's Balance)
1/2 cup coconut oil
1 1/2 cups organic cane sugar
3 eggs
1 tsp gf vanilla
1/2 cup sour milk sub - (I soured Almond milk with 1-2 tsp of lemon juice)
1/2 cup sweet white sorghum flour
1/2 cup tapioca flour
1/2 cup brown rice flour
1 tbsp potato flour
1 tsp Xanthan Gum
4 Tbsp cocoa
1 tsp baking soda
1/2 tsp cinnamon
2 cups shredded zucchini
1/2 cup GFCF chocolate chips
3/4 cup walnuts (optional)I didn't use
Recipe
Cream margarine, oil and sugar together.
Add eggs, vanilla and milk sub.
Beat well.
Add dry ingredients.
Stir in zucchini.
Spoon into a greased 13x9 inch pan.
Sprinkle with chocolate chips and nuts.
Bake at 350 degrees for 45-60 minutes or until a toothpick comes out clean.
