    List of Ingredients




    DRY INGREDIENTS
    1 1/2 cups gluten-free flour blend (like Mock Better Batter)
    1/2 coconut or coconut flour
    2 cups sugar
    1 teaspoon xanthan gum (optional)
    2 teaspoons cinnamon
    ½ teaspoon salt
    1 teaspoon baking powder
    2 teaspoons soda

    WET INGREDIENTS
    4 eggs
    2 cups grated carrots
    1 ½ cups of oil
    1 teaspoon vanilla
    1 small can crushed pineapple (drained)

    Recipe



    Preheat oven to 350°F

    Mix all the dry ingredients together.

    Whisk eggs until frothy then add remaining wet ingredients and combine.

    Add the wet ingredient mix to the dry mix and stir until well combined.

    Pour mix into three 9-inch pans (greased and floured) and bake for about 25 minutes or until done.
