List of Ingredients
Dry Ingredients
2 cups gfcf flour mix (We use Bette Hagman’s mix.)
2 teaspoons xanthan gum
¾ cup fructose, xylitol or sugar **
1 teaspoon salt
3 ½ teaspoons baking powder
¼ teaspoon vanilla powder
Wet Ingredients (All ingredients need to be at room temperature)
½ cup Spectrum shortening (or 1/3 cup coconut butter)
1 cup pineapple or orange juice (can drain juice from canned pineapple or use frozen juice. For frozen juice, do ¼ cup juice concentrate and ¾ c. warm water)
3 beaten eggs, room temperature (can put eggs in warm water to warm them up)
Recipe
Preheat oven to 350 degrees. Grease and flour baking pan. Mix all ingredients ½ minute on low and 3 minutes on high. Pour into prepared pan. Bake 35-40 minutes for 9 x 13 pan; 25-30 minutes for round layer pan; or 15-20 minutes for cup cakes.
