    1 cup sugar (I have used white and brown)
    1/2 cup butter (have used oil or butter, both work)
    1 egg (Egg Replacer works)
    1 cup cf milk with 1 teaspoon baking soda (have used hazelnut milk, also
    used water once)
    1 teaspoon vanilla
    1/2 teaspoon salt
    2 cups flour (in the past I always used spelt or soft wheat flour that
    we ground ourselves, no white flour ever)
    3 cups chopped rhubarb

    Anyway, here is my guys' favorite rhubarb cake. I increased the amount of rhubarb to this much because they like it, you could use less. I need to figure out how to use a gluten free all purpose flour. Would I just add a couple teaspoons of xanthan gum?

    Oven at 350. Cream butter or oil and sugar, add eggs or substitutes and beat well. Add flour, salt, milk, vanilla and beat well. Pour into greased 9X13 pan and sprinkle rhubarb on top. Sprinkle top with 3/4 cup
    brown sugar and 1 teaspoon nutmeg. Bake 45 minutes. (original recipe states "good as is or topped with ice cream or whipped cream" - who knew?)
