    List of Ingredients




    Cake:
    1 Cup Protein Powder -- Vanilla, Sifted
    2 Tsp. Baking Powder -- Sifted
    1/8 Tsp. Salt -- Sifted
    ½ Tsp. Cream Of Tartar
    5 Large Eggs -- Separated
    2 Tsp. Vanilla Extract
    1 Tbs. Lemon Peel -- Finely Grated
    1 Tsp. Lemon Extract
    ½ Cup coconut cream
    ¼ Cup Water
    1/16 - 1/8 tsp stevia Powder and 1/4 cup apple sauce

    Frosting:
    2 Ounces coconut cream
    2 Tbs. margarine
    1 Tsp. Vanilla Extract -- Or Lemon Extract
    3 Ounces soy Cream Cheese
    1/8 tsp stevia powder

    Recipe



    Preheat oven to 300f. Spray a bundt pan with cooking spray very well.

    Cake:
    Sift protein powder, baking powder and salt and set aside.

    In a large bowl, beat egg whites with cream of tartar until stiff.

    In another bowl, beat egg yolks, stevia powder and applesauce, extracts and lemon peel.

    Beat in water and coconut cream, then beat in dry ingredients.

    Fold into whites very carefully, then spoon into prepared bundt pan.

    Do not beat or you will break down the air in the egg whites and the cake will be a pancake.

    Bake for 45 minutes, then let cool 10 minutes before inverting and removing (This is the tricky part -just do your best)

    Frosting: Beat the coconut cream, margarine, soy cream cheese, stevia powder and extracts well. If this is too thick, add more coconut cream, 1 Tbs at a time.

    Drizzle over cooled cake.

    Notes from Josh and BL:

    We find a spring form pan or a silicon pan works much better than a bundt pan. The silicon pan especially has better release and less chance of breaking the delicate cake. We have one the is shaped like an open rose and this cake looks so pretty when caked in that.

    Vance's Dari-Free mixed double strength can be used in place of the coconut cream, but it has sugar so may not work for those using stevia for anti-candida diets.

    Other extracts work nicely for flavouring the cake and frosting. Try almond, orange or for a real treat add cotton candy flavouring and fold in confetti sprinklz when adding the egg whites.
