YUMMY Carrot Cake (Cupcakes)

List of Ingredients
1/2 c Applesauce
1 tsp vanilla
1/2 c vegan margarine- softnened
1 tsp salt
1 1/2 tsp baking powder
2 1/4 tsp cinnamon
1 c sugar
1 1/4 c GF flour (I used a combo of sorghum, tapico, rice & 1tsp xanthan)
1/4 c soy milk
1 c grated carrots
1 c walnuts (optional)
Recipe
Pre-heat oven to 350 Degrees F.
In a large mixing bowl combine all ingredients and mix until well blended.
Transfer into muffin tins (either sprayed with cooking spray or lined with cupcake liners.)
Bake for approximately 25 minutes.
Cupcakes are done when toothpick inserted in the center comes out clean.
Makes 18 Cupcakes.
