    Fancy Stuffed Dates

    Source of Recipe

    Karen Tressler

    Recipe Introduction

From “The Good Goodies: Recipes for Natural Snacks ‘n’ Sweets by Stan and Floss Dworkin (1975)

    List of Ingredients

    1 cup seedless raisins
    1/3 cup hulled sunflower seeds
    24 to 30 dates
    1/4 cup honey
    1 cup unhulled sesame seeds

    Recipe

Grind the raisins and place in large mixing bowl.
Add the whole sunflower seeds and mix well.

Pit the dates, removing the stone and cutting lengthwise.
Stuff the mixture into the date

In small pan, warm the honey (don’t heat it too hot, you just want it to thin a bit).

Measure the sesame seeds into a small bowl or saucer.
Dip the stuffed dates in the warmed honey, then roll them in the sesame seeds.

    Yield: 24 to 30.

For a more textural difference, cook the honey for about 8 minutes over a very low flame, allow the honey to cool enough to handle, then dip the dates in it and roll the dates in seeds. The honey will half harden.
