Recipe Introduction
Original recipe from Chef Celia Regev
List of Ingredients
1 cup finely ground almonds or almond flour
1/2 cup sugar
1/2 egg white (about 1 1/2 tablespoons)
flavoring, optional, see Author's Notes below
Recipe
Place the almonds and sugar in a food processor equipped with a steel blade and process, adding just enough egg white to bind the sugar and the almonds together.
If it is too soft, add a bit more ground almonds or almond flour.
Yield: 1 1/2 cups marzipan
Author's Note: Celia suggests adding a little cognac, rum, orange-blossom water, orange peel, cinnamon, coriander, or whatever flavor you like to the marzipan before processing.
Marzipan is an almond and sugar paste used to ice cakes and other pastries or sculpted into a variety of shapes to be eaten as candy or used as cake decorations.
