1/2 cup honey
1/2 cup desiccated coconut shreds
1 cup almonds shelled
Recipe
We call this recipe Old Man Almonds because the bit of coconut on the thick end looks like a head of white hair.
In a small saucepan, bring the honey to a boil over very low heat and allow to simmer for about 8 minutes (no need to stir if the flame is low enough).
Remove pan from heat and put a couple of folded towels under one side of it to tilt it toward you.
Pour the coconut shreds into a shallow dish.
Take an almond by the thin end, and carefully dip the thick end into the hot honey, about a third of the way in. NOTE: The honey is hot and will burn fingers. Be careful!
Dip the honeyed end of the almond into the coconut shreds and place onto an ungreased baking sheet to cool.
Repeat with all the almonds. If the honey hardens, reheat it momentarily on low.
NOTE: You can use any leftover honey and coconut to make a few Coconut Balls
