Peanut Butter cups

Center:
1 pound gfcf margarine (soften in large bowl)
2 cups peanut butter
2 1/2 to 3 pounds confectioners sugar (use corn-free type)
3 tsp gfcf vanilla (use 3 dashes ground vanilla)
Coating:
12 oz pkg gfcf chocolate bits.
Recipe
For center, cream softened margarine and peanut butter together.
Add vanilla and confectioner's sugar. (I use just 2 1/2 lb.) Mix until well combined. You should be able to form small 1/2 balls at this point.
Melt half package of chocolate according to package directions. Spoon into miniature cupcake papers (as many as you have peanut butter balls).
When chocolate is hardened press a 1/2 inch ball into each chocolate bottom.
Melt remaining chocolate: Spoon over peanut butter center.
Let cool completely, Wrap in pretty foil for a holiday theme.
