5 c Rhubarb, diced
4 c Sugar
6 oz Jello, strawberryRecipe
I am certain we all know the dangers of red food colouring so feel free to try the uncoloured variety instead (my asian food store has agar agar "jellos" or use the healthier ones that use natural food colourings. I am not sure of the authenticity of the "amish" designation as most of the amish and mennonite women I know use apples
to make jam but it's something different to try anyway.
Mix rhubarb and sugar together and let stand overnight. In morning, cook mixture until rhubarb is soft. Remove from heat and stir in jello until it is dissolved. Jar and seal in a BWB as directed.
