List of Ingredients
1 Aubergine (eggplant)
1 tsp Oil
1 sm Onion
1 sm Green pepper
1 tbl Vinegar
Salt and pepper to taste
Recipe
Bake aubergine until tender. After it has cooled, remove the insides and chop with green pepper and onion. Add remaining ingredients.
This will keep in the fridge for several weeks. Or ladle into prepared jars allowing proper head space. Process as recommended in your canner manual.
