    1 gallon Zucchini chunked or shredded, peeled and seeded
    46 ounces Pineapple juice canned
    1 tablespoon Pineapple extract
    3 cups Sugar
    1/4 teaspoon Salt
    1 1/2 cups Lemon juice

    Recipe



    Combine all ingredients in large heavy pot. Simmer for 30 minutes until zucchini becomes clear. Can in pint jars and pressure can at 10 pounds for 10 mins. Makes 12 pints.
