Country Club Chicken Casserole

List of Ingredients
2 1/2 cups cooked chicken, cut into large pieces
2 cups cooked rice
1 cup FINELY chopped onion
1 cup FINELY chopped green peppers
1/3 cup sliced pimentos
1 tsp garlic salt
1/4 tsp pepper
Equivalent to 1 (10 3/4 oz) can cream of mushroom soup*
1/2 cup GF mayonnaise
ripe olives, optional
Recipe
Combine all ingredients except olives. Toss lightly. Turn into a greased shallow 2 qt casserole. Bake at 350 for 25 minutes or until thoroughly heated. Garnish with ripe olives, if desired. (Original recipe calls from 1 cup grated cheddar cheese to be sprinkled on top prior to baking.)
