    Last Minute Pasta Casserole

    Recipe Introduction

    This recipe is reproduced from: The Light Hearted Cookbook by Anne Lindsay.

    List of Ingredients

    4 oz Rice Elbows or other small pasta like penne or spirals
    2 cups gf/cf Spaghetti Sauce
    1 Small, sweet green or yellow pepper, chopped
    2 Large mushrooms, sliced
    1 cup Kernel corn or green peas
    2 tbsp Grated Soy Parmesan or Pine Nuts

    Recipe

    In a large pot of boiling water, cook pasta until tender but firm, drain.

    Meanwhile, in oven safe casserole or heavy saucepan over heat, combine Spaghetti Sauce, sweet pepper, mushrooms, corn or peas; simmer for 5 minutes.

    Stir in hot cooked pasta, sprinkle each serving with Soy Parmesan or grated pine nuts.

    Recipe may be doubled.
