Vegetable and Grain Casserole

List of Ingredients
3 tablespoons cold pressed olive oil
2 cloves garlic, chopped
1 onion, chopped (optional)
1 red pepper, chopped
1/2 pound mushrooms, sliced
1 cup brown rice
1/2 cup wild rice
8 cups water
1 cup lentils
1/4 cup millet
1/4 cup amaranth
16 oz. tomatoes, finely chopped
2 carrots, sliced
Other vegetables, chopped (spinach, bok choy, kale, etc.)
1 teaspoon basil
1/2 teaspoon black pepper
Dash of cayenne pepper
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon sea salt
Recipe
In a 8-quart pot, saut� garlic, peppers, and mushrooms. Add rice and saut� for another minute.
Add remaining ingredients. Bring to a boil. Cover and simmer for 45 minutes.
Serves 6 to 8 people.
