1 lbs. chicken, cut up into cubes
1 cup GF all-purpose baking mix
1 tsp. salt
1/4 tsp. pepper
1/8 tsp. garlic powder
1 egg replacement (mixed according to package directions)
1 cup CF milk (rice; coconut, etc.)

Cube chicken and place in deep bowl. Mix egg replacement and add CF milk. Whisk together in small bowl and pour over chicken, then stir. In separate bowl mix dry ingredients. Take chicken from liquid mixture with slotted spoon and place in dry ingredients and coat thoroughly. Fry. Stir or flip chicken for even cooking and done when golden brown all over. Lift out with slotted spoon and place on paper towel to absorb excess oil. May place in freezer bag and freeze.
Also, my mix all dry ingredients in a Ziploc baggie and write the needed wet ingredients on the outside. Then when you need to whip up some, this is much quicker. Do several bags while you are at it.
